The word BILTONG is formed from the Dutch words "BIL" (meaning meat buttock or hind quarter) and 'TONG" meaning "strip". So it's just that - a strip of meat.
The basic spicing is a dramatic blend of vinegar, salt, sugar, coriander and other spices. Various recipes exist, but here at Springbok Butchery we use a tested and proven recipe from the South African connoisseur.

Cabanossi is a type of dry sausage, similar to a mild salami. It is made from pork and beef, lightly seasoned and then smoked. It traditionally comes in the form of a long, thin sausage, 30 to 40 centimetres long, and 1.5 centimetres in diameter. Variations include chicken and duck cabanossi.

The secret in the making of good boerewors lies in the quality of the ingredients used. The better the quality of the meat the better tasting the boerewors.
Boerewors is created by combining minced meat and cubed spek (pork and/or beef fat) with spices and preservatives (vinegar). The Springbok Butchery uses an award wining recipe and high quality meat to bring you the best boerewors in New Zealand.

This is a popular South African snack, made by drying the traditional, coriander-seed spiced boerewors sausage. It is usually made from a "thin sausage", as the thinner sausage dries more quickly and is thus less likely to spoil before it can be preserved.
The recipe used for dried sausages is similar to that for boerewors. Dried sausages are not used for cooking, but to slowly chew on when feel he need for a snack. It lasts long, and is the ideal snack for a long trip!

Sosatie/Kebabs is a traditional South African entree. The term derives from sate ("skewered meat") and saus (spicy sauce). It is of Cape Malay origin, used in Afrikaans, the primary language of the Cape Malays, and the word has gained greater circulation in South Africa.
